Heat sesame oil in a large skillet. Add shallot, carrots, and water chestnuts. Cook 2-3 minutes.

Add the ground beef, salt, & pepper. Cook until no longer pink, about 5-7 minutes. Drain any grease.

Whisk together the hoisin sauce, soy sauce, vinegar, garlic, and ginger in a small bowl.

Add the sauce to the pan and stir to combine. Cook 1-2 minutes to heat through.

Serve in lettuce leaves. Top with sriracha, sesame seeds and/or green onions. Enjoy!
