Grilled Vegetables Without A BBQ

Wash & slice 1 Zucchini, squash,red pepper, eggplant & onion. Slice either lengthwise or crosswise.

Chop up fresh Oregano, thyme, parsley & basil. 2 tbsp total & set aside.

Drizzle 1 tbsp vegetable oil, toss to coat evenly.

Grill 3-4 minutes on each side until fork tender.

Once grilled, put them in a bowl. Add fresh chopped herbs. (Basil, Oregano, Parsley & thyme)

Salt & pepper to taste. Cover & let the heat from veggies wilt & lightly cook the herbs.

Grill 1 sweet onion & 1 fresh corn on the cob. Drizzle w/ a small amount of olive oil.

Add the grilled onions into the grilled veggies. Drizzle w/ some Balsamic vinegar (optional)

Mix to coat evenly. Add the grilled corn on the cob. Serve w/ my homemade pasta ( see my blog)
