Green Halloumi Salad With Pesto Dressing

For the pesto dressing: Blend 100g herbs/ arugula, 1/2 cup oil, juice of 1 lemon & 1 cup walnuts

Place a bunch of herbs and arugula in a bowl and dress with olive oil, seasoning & sherry vinegar

Add 1 small mandolined fennel, 2 Lebanese cucumbers and mix to combine

Add the chopped lettuce and stir to combine

Add salad mix to a serving platter and season

Top the salad with pan fried haloumi, avocado slices, nuts of your choice (I used walnuts) and pesto

You can also add Sicilian olives and chopped fennel fronds. Enjoy!
