500 g (1 lb) green beans, 1 tomato, 1 large onion, 4 garlic cloves
Cook onion in 1/4 c olive oil over medium heat until soft and lightly caramelized
Add green beans, garlic and salt. Reduce heat to low, cover. Cook for about 2 hours
When green beans are soft, add tomato and cover. Leave for about 30-45 minutes
Once tomato has softened, reduce the liquid on high heat
