Add sugar and water to a small pan, and chocolate + vegan butter to another

Cook the sugar syrup until sugar has dissolved, and melt the chocolate mixture

Pour the sugar syrup into the chocolate

Add the cocoa, flour, baking powder/soda, salt and vanilla bean paste. Whisk to combine

Use a spoon to portion out 10-12 cookies across two lined trays
