Combine the flours, xanthan gum and salt (and/or sugar for a sweet pastry)

Add cold chunks of butter

And use the pads of your fingers to rub the butter into the flour

You should have sheets of cold butter throughout the pastry

Add the cold sour cream

And use a spoon or your hands to lightly combine without squashing the butter chunks

Add ice water, just enough to form a cohesive ball of dough

Wrap the pastry & flatten it into a rough rectangle. After 1 hour in the fridge it’s ready to use!
