Fudgy Zucchini Brownies with Chocolate Chunks

Preheat oven 350f. Line 9x13 with parchment. Spray with non-stick or lightly butter.

2 C flour • 1 1/2 tsp baking soda • 1 tsp salt • 1/2 C Dutch unsweetened cocoa

Grate zucchini. Enough for 3 cups.

1/2 C unsalted butter or oil • 1 1/2 C sugar • 1 tsp vanilla • 1 egg • 1/4 C coffee

Add dry ingredients in 2 additions. Mixture will be really thick & dry. Add zucchini. Very stiff!

1 C chocolate chunks • 1/2 C pecans or walnuts. Save some for the top.

Mixture is thick. Spread into 9x13. Bake 350f 30-40 min or until done.

It bakes up really moist & fudgy. A favorite at our house using garden zucchini.
