Crack egg white into shimmering oil in a small skillet, reserving egg yolk in the shell.

While the egg white cooks, use a spatula to gently push it into a prettier shape.

Season egg white with salt and pepper.

When egg white has cooked through, tip the egg yolk onto the center of the white.

Season yolk w/salt & pepper. Cook until just barely set and the yolk stays put on the white.
