After you sift your dry ingredients and set aside... Place egg whites in bowl

Start mixing on low

Cream of tartar (optional but recommended as it can help stability) on low speed

Keep mixing until foamy

Slow stream of sugar, mix on low and gradually increase to high after sugar is all added

Mix
6
Keep mixing, check if it’s stiff enough...

Keep mixing until stiff.

Fold dry ingredients into it

This is where I separate the batter if doing multiple colors and then add color and continue folding
