cooking with my dad! A simple, vegan version of a Filipino dish

any type of lentil 1 cup

Shallots (you really only need 1)

1 clove garlic

2 Roma tomatoes

2 TBSP soy sauce

Fresh Paria leaves or Marungay/ Spinach

Add lentils to a pot

Fill pot with water and let some of the grit rinse out. Soak lentils for 30 mins.

Trim Paria leaves - keep tender parts (parts that snap off easily)

mince garlic

mince shallot

cook lentils approx. 1 & 1/4 cup water: 1 cup lentils

when lentils are halfway done & have a thick, soupy consistency, turn heat off, cover, and let cook

add minced shallots to a hot pot with a small amount of oil

add minced garlic

add diced tomatoes

add soy sauce - he would normally also add fish sauce here, so feel free to use your fav substitute

add a splash of water if needed

add tomato sauce to lentils

mix well

+ spinach you can add any type of leafy green at this step
