What you’ll need
Pink Pepper Corns
Freshly Grated Nutmeg
Fresh Fig Leaves
Soak to clean the fig leaves of any dirt or residue.
Dry them on paper towels
Line your moulds with plastic wrap and then tie a cross of butchers twine long enough to tie the top
Line the moulds with fig leaves overlapping as you go. Ensure there is enough to fold over the top
Toast individually the sesame seeds, nuts and aniseed until golden add them to the spice mix
Add the figs nut mix and the rest of the ingredients and pulse in a food processor until fine.
Tightly fill your moulds with the mixture folding over the fig leaves to seal adding extra if needed
Tie string to hold the bundle together. Lightly oil the leaves with olive oil to preserve.
