Roasted Red Pepper
If using jarred red peppers, drain and pat dry with paper towels to remove all moisture.
Roughly chop and add to a food processor or blender.
Quarter onion and add to a food processor or blender.
Add in feta, garlic, lemon juice, oregano, Sriracha, and olive oil.
Pulse to combine.
Refrigerate in an air-tight container for a few hours or overnight to let the flavors marry.
Serve with pita and crudites.
