Preheat oven to 350 degrees. Grease loaf pan & set aside. Next, mash the bananas.
Add the greek yogurt and egg, blend together fully.
Add the white sugar to the banana mixture & stir until fully mixed.
In a small bowl combine flour, salt & baking powder.
Add the flour mixture to the wet ingredients & stir until just blended.
Add your mix-ins; carrots, nuts, coconut & raisins.
Pour the batter into the prepared loaf pan. Bake for 50-60 minutes until toothpick comes out clean.
Allow the bread to cool in the pan for 5 minutes before removing from the pan.
