Let’s make Ethiopian-Spiced Beetroot & Pumpkin Bisque!

This is a sultry & spicy soup, using warming Ethiopian Berbere Spice Mix.

Ingredients: 3 cups of cooked pumpkin

1 small onion diced

2 cloves of garlic finely chopped

3 cups of vegetable broth

2 tablespoons of tomato paste

2-4 teaspoons berbere spice mix

Start with less, and add more to taste

1/2-1 cup non-dairy milk, as needed

2 teaspoons of lime juice

2 cooked beetroots (optional)

Salt and black pepper to taste

Pumpkin seeds to garnish

Cook the onions and garlic until lightly brown

Blend the pumpkin, vegetable broth, tomato paste, onions & garlic

Add the Berbere Spice Mix and blend for 5 minutes until smooth

Add non-dairy milk, lime, salt & pepper to a pan and heat for 15 mins

The spiced pumpkin is delicious without beetroot
