Easy Vegan Samosas

Start by boiling one large potato until tender. Set potato aside to cool.

In cast iron skillet add chopped shallot and frozen peas with tbsp avocado oil.

Once fragrant add your “beef” crumbles! Stir to combine.

Add your chopped potato, 1 tbsp avocado oil, 1 tbsp water and cook on medium heat 3 min.

Add your spices! I used 1 tbsp curry powder, garlic powder, chili powder, ginger & cardamom.

Cook on low heat for another 2-3 min. Add salt and pepper to taste. Let filling cool. Folding time!

Use water to seal edges of samosa. Spray avocado or coconut oil and then place in air fryer.

Cook on 350 for 3 minutes and then flip! Serve with chutney or yogurt sauce!
