Easy green potato salad (FODMAP friendly)

Boil 2kg waxy potatoes (I used Kipfler) in well salted water until you can stick a knife through one

Drain and allow to steam dry

Gather the ingredients for the green dressing

To a high speed food processor, add 2 handfuls of rocket (arugula)

A bunch of mint (or your preferred herb)

A large bunch of dill (or another herb you fancy)

1/2 to 3/4 cup good quality olive oil or oil of choice

The juice of a lemon

+ sea salt flakes and freshly cracked pepper

Blend to combine

Pour the green dressing over your cooked potatoes

Dress with herbs

A dramatic sprinkling of extra rocket (arugula)

Now it’s time for your toppings of choice! I used walnuts
