Easy Cherry & Strawberry Pie

Start by preparing your fruit; pit your cherries; use a dowel to push the pit through.

Set fruit aside. On to your crust! Add 1.5 cups flour & 1/2 tbsp salt. Stir to combine

Add one cup of very cold cubed butter. Mix together until a sticky dough forms.

Add your last cup of flour. Mix until dough is crumbly ( resembling breadcrumbs).

Add 4 tbsp ice cold water to dough. It should be sticky enough to hold together.

Form dough into a ball. Cut in half for the double pie crusts. Wrap in plastic & refrigerate 1 hour

Pie filling! Add fruit, 1/2 cup water, 3 tbsp corn starch & lime juice & 2 tbsp coconut sugar to pan

Bring mixture to a boil. Reduce heat to low and cover for 10 minutes! This is when the magic happens

Remove dough from fridge. Wait 5 minutes before rolling out. Roll out to fit your pie tin

Add your pie filling to the crust!

Add a top lattice, double crust or leave as a single layer. If adding top, brush with egg wash

Refrigerate for about 20-30 min. Bake on 375-400 for 45 min- 1 hour.

Bake until crust is golden and filling is bubbly!
