New England clam chowder
sauté chopped bacon to a pot over medium heat

cook until crisp and remove from pot ~ bacon fat in the pot

add butter, chopped onion and garlic cloves ~ sauté for 5 minutes

add flour ~ stir & cook for 1 minute

stir in whole milk and cook for 1 to 2 minutes or until thickened

stir in bottled clam juice and the reserved clam juice

add Old Bay seasoning, kosher salt and fresh ground pepper

bring to a boil and add diced potatoes ~ turn heat to low and simmer for 12 to 15 minutes

add clams, the cooked bacon and fresh thyme

heat for 2 to 3 minutes then serve
