2 cans of coconut milk

Put on sear and add instant read thermometer with extension probe.
Stir occasionally. Stop Quick Cooker when temperature reaches 180.
Pull 1/3 cup of the cooked coconut milk. Add 1 tbsp gelatin or agar agar once cooled.
Add 3tbsp syrup or other flavoring (not honey, will kill good culture).
Stir and add back to quick cooker. Cool to 90-100F.
Add 3tbsp yogurt or probiotic to 1/3c of mix in quick cooker.
Stir back into rest of liquid in quick cooker.
Set quick cooker on proof and adjust to 6 hours. Repeat 2x for total of 12 hours proof time.
Important! Don't stir in proof setting as it disrupts culture growth.
Pull 3tbsp for next batch. Add flavorings to remaining, vanilla/fruit.
Let cool in fridge 8 hours or overnight. If not thick enough, strain in milk bag.
