Mix butter and sugar together until creamy and smooth

Add flour and salt and mix until combined

Fold in the pecans if using. Mixture will be crumbly

Empty mixture into prepared pan and press it into the bottom of pan firmly

allow to cool while making the filling

Whisk together the sugar, spices, salt, pepper and cornstarch

Then add the pumpkin purée, vanilla, eggs

And cream and whisk really well until fully combined

Pour into pan over crust

Transfer to baking dish (optional) and bake until just set

Allow to come to room temperature then refrigerate for at least 2 hours to fully set

Then slice, top with a dollop of whip and enjoy (you can also serve with chopped pecans)
