Crab & Blistered Tomato Panzanella

Cut some ciabatta or French bread into cubes, place on baking sheet, add oil & bake at 400- 10 min

Set your croutons aside! Preheat pan to medium high heat and blister tomatoes! Remove from pan.

Chop your cucumber, onion & peppers. Add blistered tomatoes!

I chopped up some mozzarella, basil, chives and garlic! Add it in with 1 tbsp champagne vinegar

Add crabmeat & croutons! I used claw; any will do!Toss together to coat.

Add dressing; equal parts olive oil & champagne vinegar. Add juice of a lime, tbsp Dijon mustard.

Add capers! Chill for at least 30 min; up to 4 hours to let the flavors marinate!

Season with salt, pepper & red pepper flakes for a tad bit of heat! Enjoy!
