2T oil,1minced shallot,garlic,4c greens,1c ham,3/4cwater, 5ozcream cheese,1/4c cream,1/3c Parmesan
Sauté shallots and garlic for 1 minute or until transparent.
Add the minced ham and continue cooking for 1 minute.
Add the greens and stir to combine. Cook for 2 minutes.
Season with salt and pepper to taste and add water.
Cover and lower the heat; simmer for 10 minutes. Uncover and cook until all liquid evaporates.
Add cream cheese and cream; stir well.
Add cheese and cook until thickened. Serve at once. (Leftovers make a great filling for Empanadas!)
