Comfort Spinach Mushroom Tortellini Soup
Sauté 1 yellow onion with olive oil. Add 2-3 minced garlic.

Add sliced mushrooms, about 2 cups. Keep stirring for a few minutes.

Season with salt, black pepper. Add fresh thyme.

Add 1 tbsp of flour.

Deglaze the pan with 2 cups of broth.

Add 2 cups of water and bring it to a simmer.

Add a leftover parmesan rind.(optional)

Add one package of fresh tortellini 20 oz. Let it simmer until the tortellinis are cooked.

Remove parmesan rind from the soup.

Add a splash of heavy cream.

Add spinach in the end and combine well.
