Cod Fish Fillet

Start by cutting your cod into sandwich sized pieces

Season each piece generously with Cajun seasoning.

For the breading I used Louisiana classic fry breading mix.

Coat your fish generously in breading.

Tartar: mix 1/2 cup mayo with 2 tbsp chopped dill pickles & capers. Sprinkle of old bay & mix!

Preheat about 1.5 inches of avocado oil in a pan on medium heat for 5 min. Place fish fillet in oil

Cook for about 3 min on each side. Flip halfway through

Let fish cool on rack. Assemble; tartar on brioche, fish fillet, microgreens and more tartar!
