Prepare your base using either digestive biscuits or chocolate biscuits

Place in food processor to crush (or do it manually in a plastic bag)

Make sure there aren’t any large crumbs left

Place in a bowl while you melt your butter

Melt in microwave or on low fire

Pour over crumbs and mix well until all crumbs are wet

Place in desired springform pan

Make sure you press them down well and evenly

Bake for 10 mins in preheated oven (180C) until golden brown, remove and let cool a bit

Chop 290g of dark or semisweet chocolate. (If you have chocolate chips no need to chop them)

Melt over hot water or in microwave

Meanwhile mix 900g of cream cheese

Add 1/4 cup cacao powder and 1 & 1/4 cup sugar

Cool the melted chocolate in a bowl before adding it to the cream cheese mix

Make sure it cools well on the side

Add in eggs one at a time

Add the melted chocolate into the batter and mix well

Once all are incorporated in stand mixer set aside

With a spatula make sure all ingredients are mixed well

Pour batter over cooled crust

Tap a few times on the counter to release any bubbles and bake in same preheated oven for 1 hour

Meanwhile prepare the glaze

Whipping cream

Add one tbsp sugar and melt over low heat

Mix well and set aside to cool

Once cake cools down spread the ganache all over and put in fridge
