Cheesy Roasted Vegetable Lasagna

Preheat oven to 400. Brown your meat ( i used beyond beef) with onion and garlic. Set aside.

Roast your eggplant and zucchini on 400 degrees for 15 min.

Time to get cheesy! Add an egg, oregano, garlic , red pepper flakes, pepper to 1.5 cups ricotta. Mix

Add half can fire roasted tomatoes and layer of beyond meat or beef.

Layer roasted vegetables on meat, tomato sauce layer.

Add your heavenly goodness of herbed ricotta.

Add rest of tomatoes and Roasted eggplant layer.

Add goat cheese drops over eggplant. Cover in foil and bake at 375 for 30 min.

Sprinkle Parmesan & chives; serve. Can be saved in fridge or frozen!
