How toCheddar Broccoli Risotto with Chicken

Chop 1 Red Bell Pepper and 1/2 an onion using the Food Chopper.

Cut about 1lb boneless, skinless chicken into bite-size pieces.

Add 1Tbsp Olive Oil to the inner pot with the chopped veggies & 2 minced garlic cloves. Sear.

Stir in 1 cup Arborio rice.

Add chicken pieces & 3c chicken broth. Stir to mix.

Lock the Quick Cooker lid, and select the White Rice setting. Press start & voila!

When timer is up stir in 2oz cream cheese, 4oz cheddar cheese & broccoli. Sear 4 minutes to combine.
