Cauliflower ChickPea Tacos With Acocado Crema

1 medium cauliflower cut into bite size pieces.

2 cans of chickpeas

2 cups of diced radishes

4 tbsp olive oil + 2 tbsp lime juice

Pour over the vegetables and mix to coat.

Add 1 pkg taco seasonings or 2 tbsp. Of my DIY taco seasoning.

Avocado Crema mix together 1 avocado, 1cup sour crm. 3 tbsp cilantro, 2 tbsp lime , 1 tsp Worchester

Roast the vegetables 450 degrees F. 20-25 minutes. Add 1/2 cup cotija cheese.

Add roasted vegetables to soft corn tacos and top with the avocado crema.
