Caramelized Butternut Squash Paleo Muffins

Start by roasting your butternut squash until tender and caramelized. Remove 3/4 cup of flesh.

In mixing bowl add squash, 4 eggs, 1/3 cup maple syrup and a tsp almond extract.

In another mixing bowl add 1.5 cups almond meal, tsp baking soda, tsp. salt and pumpkin pie spice!

Make a well with your dry ingredients and pour in your wet. Mix thoroughly.

Add your mix ins! I’m using chocolate chips!

Spoon batter into muffin tin with liners. Add more chips on top! Bake at 350 for 22-25 min.

Garnish with more cinnamon on top! They smell and taste heavenly!
