Caprese Panini W/ Homemade Panini Bread

1 Panini loaf (homemade)sliced lengthwise. Sprinkle 1 tbsp. Olive oil.

8 ounces sliced,fresh mozarella (226g) & 1 medium garden tomato sliced into 1/4 inch thick slices.

6-8 basil leaves cut into ribbons & 1 tbsp.aged balsamic vinegar.

5-8 slices of bacon (optional)Salt & pepper to taste.

Spread 1 tbsp.butter on the outside of the bread. To have a crsipy,golden brown outside.

Grill in Panini press or grill pan w/ a grill press. Cook 3 minutes.

After 3 minutes, take out from the grill, when bread is crispy and browned & mozzarella is melting.

Cut in quarters and serve. 1/2 of the whole sandwhich per person.
