Brown Butter Pancakes With Sheet Pan Berries

Cooking with Doctor Jo. Recipe makes 6-8 pancakes.

Preheat oven to 350-degreees. Add 1/2 cup sugar to 4 cups of mixed fresh berries

Put berries on a Sheet pan and bake for 20 minutes at 350-degrees

Gently stir after 20 minutes and bake for 10 minutes more.

Remove berries from after 30 minutes. Make pancakes while the berries are roasting.

In a mixing bowl add 1 cup of flour, 1 tsp. Baking pwdr. 1/2 tsp soda, and 1/4 tsp. Salt.

In a separate bowl add 3/4 cup of milk.

1/4 cup of sour cream.

1 large egg

1 tbsp. Maple syrup.

1/2 tsp vanilla

2 Tbsp browned butter.

Whisk together and add to dry ingredients. Batter will be lumpy. Don’t over mix.

Grease a hot griddle or skillet with some butter.

Use a scoop to add 1/2 cup batter to hot skillet for each pancake.

Cook until batter is set and bubbles have popped. About 2-3 minutes

Give a quick flip and cook 1-2 minutes more. Remove to a plate.

Add 2-3 pancakes to a plate and top with the hot sheet pan berries and whipped cream or ice cream.
