Preheat the oven to 180C or 356F

Melt 175g butter, add 1 cup (230g) caster sugar and combine. Melt 200g dark choc on double boiler

While chocolate is melting, add 3 extra-large eggs to the mixer and whisk on high for 7-10 mins

Add 2 tbs cocoa and 2 tbs hot water or espresso to chocolate. Mix JUST until combined, no longer

Add the chocolate mixture to the mixer and whisk on low until the mixture is combined and shiny

Stop the mixer to add 50g (1/2 cup) almond meal, 2 tsp vanilla bean paste and 1 tsp fine salt

Scrape the mixer down and give it a final whisk

Decant into a linked 24x24cm baking pan and place into the oven for 15-30 minutes

Depending how fudgy you like your brownies. Store in an airtight container
