How toBasic Homemade Hot Sauce

What you’ll need
10-12 ounces
Fresno chilis
2 tsp
Kosher salt

Shallots (Medium)

Garlic Cloves (Lightly Smashed)

Black peppercorns
1/2 cup
Distilled White Vinegar
Weigh out approx 13-14 ounces of your hot peppers.

Wearing gloves, remove the seeds and ribs from the peppers.

For a hotter sauce, leave some of the ribs and seeds on the peppers.

You should end up with approx 10-12 ounces of sliced hot peppers.

Cut the slices into roughly 2” pieces.

Smash the garlic cloves and quarter the shallots. Add to the pepper mixture.

Heat peppers, shallots, garlic, white distilled vinegar, and salt in a medium pot.

Bring to a boil then reduce to a lightly bubbling simmer.

Simmer for 20 minutes, stirring occasionally.

Remove from heat and let cool for 10 minutes.

Transfer the mixture to your blender and blend until smooth and liquified.

Use a sieve inside a funnel to strain the sauce into a plastic squeeze bottle (12 oz).

You may need to stir the sauce in the sieve to push it through. Work in batches.
