What you’ll need
Flexipan - Sunflower Mold
Buy
Feta Cheese
Heavy cream
Bacon
Spinach
Mushrooms
Eggs
Cut 4 strips of bacon into small pieces and fry until browned. Strain and set aside on paper towel.

Drain half of grease and sauté 3 cups slice mushrooms in the same skillet, set aside.

Continuing in same pan, wilt 5oz. Baby spinach.

This will leave you with about a cup and a half of cooked spinach 😉

Lay all three in bottom of pan. (P.S. you don’t have to spray your Flexipan molds —ever!) ❤️👩🏼‍🍳

Top with feta cheese.

In a separate bowl, whisk together 8 eggs with 1/4 cup heavy cream.

Pour eggs and cream mixture over spinach, bacon, mushroom and cheese.

Bake @ 375 for 20 minutes

Edges should be slightly browned and middle, set! ☺️

Pulls away from sides like magic!

Invert onto serving platter and prepared to be amazed! 👀 Nothing is left behind in the pan!

Garnish with fresh basil and chopped tomatoes 🍅🌿
