Chicken Breast

Medium Garlic Cloves, Minced
1 can, 14.5 oz
Chicken Broth

Cilantro

Cannellini Beans (rinsed)

Green Bell Pepper, Chopped
3 Tbsp juice, 1-2 limes
Lime, Juiced
1 can, 4 oz
Diced Green Chilis

Medium Sweet Onion, Chopped
1 packet
White Chicken Chili Seasoning
1 can, 11 oz
Shoepeg Corn
1 can
Optional: Cream Of Chicken Soup
Sauté chopped onion, bell pepper and garlic in olive oil until starting to soften.

Add green chilis, shoepeg corn, white chicken chili seasoning (see recipe for gluten free) and stir.

Add chicken broth and stir. Add chicken and beans.

Cover and simmer gently for about 20 min until chicken is 165 F, flipping halfway through.

Remove chicken and blend a small amount of the broth. Shred or chop chicken and return to the pot.

Simmer for 5-10 mins more. Turn off the heat and stir in lime juice and cilantro (optional).

Garnishes: sour cream, shredded cheese, pickled jalapeños, cilantro and/or red pepper flakes. Enjoy!
