What you’ll need
Garlic
Spinach
Red lentils
Smoked paprika
Coriander
Yellow Onion
Carrots
Bay leaves
Cumin
Extra virgin olive oil
Celery
Chopped Tomatoes
Vegetable broth

Dice onion and finely mince garlic

Chop 2 carrots

Chop 3 stalks of celery

Add 1 tbsp. of extra virgin olive oil to a large pot on medium heat

Add onion and garlic

Cook for 2-3 minutes, stirring regularly

Add spices

Sauté until fragrant

Add carrots and celery

Cook for 4-5 minutes until vegetables have softened

Add lentils, chopped tomatoes, and vegetable broth

Add bay leaves, stir, and cover. Bring to a boil then reduce to a simmer for 30 minutes

Stir in 2 large handfuls of spinach or kale and cook until just wilted

Season with salt and pepper, serve, and enjoy!
