How To Make Lightened-up Elote
Shuck corn and spray with avocado oil.
Grill corn on high heat until slightly charred.
Grill jalapeño until lightly charred.
Cut kernels off of corn and put in a large bowl.
Chop jalapeño (add seeds for heat), onion & cilantro.
Add feta cheese, lime juice, olive oil, chili pepper, salt & pepper to chopped veggies. Mix well.
