Crunchy Granola Bars
1 and 1/4 cup oatmeal
1/4 cup brown sugar and 1/4 tsp salt
1/4 cup mini chocolate chips and 2 tbsp unsweetened shredded coconut
1/4 cup Rice Krispies
Mix well (faster with your hands!)
Melt 1/4 cup Coconut Oil, add in 1/4 tsp Vanilla Extract and 2 tbsp honey
Add to the dry ingredients and mix very well
Put in a parchment lined square (8*8) pan. IMPORTANT: Press down as firmly as you can to pack it in!
Bake at 350 F for 15-16 minutes
Score lightly with a knife and set aside to cool completely. If it’s crumbly press down a little
When completely cool cut all the way through and eat!
