Chocolate Fig Skillet Brownie (sugar free)

Soak dried figs in hot water a few minutes to soften

Drain figs and Coarsely chop (your food processor will thank you)

Process until smooth, adding hot water 1 tbsp at a time if needed to help purée

Add the softened butter and process

Then add the eggs and vanilla and process again

Add flour, cocoa powder, baking soda and salt and process just until smooth

Remove blade, and add and stir through the chocolate chips

Spread batter evenly in a greased or lined cast iron skillet

Sprinkle over with more chocolate chips and sliced figs and then bake

Bake just until set - don’t over bake - brownie will still cook/bake out of oven in the hot skillet

Bakes up perfectly! One of my favorite naturally sweetened brownies

No skillet - no prob - bakes up beautifully in an 8x8 square brownie pan
