Bacon, Mushroom & Spinach Frittata
Cut 4 strips of bacon into small pieces and fry until browned. Strain and set aside on paper towel.
Drain half of grease and sautรฉ 3 cups slice mushrooms in the same skillet, set aside.
Continuing in same pan, wilt 5oz. Baby spinach.
This will leave you with about a cup and a half of cooked spinach ๐Ÿ˜‰
Lay all three in bottom of pan. (P.S. you donโ€™t have to spray your Flexipan molds โ€”ever!) โค๏ธ๐Ÿ‘ฉ๐Ÿผโ€๐Ÿณ
Top with feta cheese.
In a separate bowl, whisk together 8 eggs with 1/4 cup heavy cream.
Pour eggs and cream mixture over spinach, bacon, mushroom and cheese.
Bake @ 375 for 20 minutes
Edges should be slightly browned and middle, set! โ˜บ๏ธ
Pulls away from sides like magic!
Invert onto serving platter and prepared to be amazed! ๐Ÿ‘€ Nothing is left behind in the pan!
Garnish with fresh basil and chopped tomatoes ๐Ÿ…๐ŸŒฟ
