Take out 2 slices of frozen pancetta (note: store by wrapping in plastic wrap and placing in a bag)

Dice up the pancetta info tiny cubes

Getting some unorthodox heat by slicing two frozen Thai chilis

Heat up some olive oil on LOW heat and add your pancetta - we’re cooking low&slow to render the fat

Once the pancetta is rendered and just starting to crisp (BARELY), add the diced onion

Don’t forget to toss in the Thai chili for some 🔥🔥🔥

Cook everything until your onions begin to look translucent

This is sort of cheating but I SWEAR by Rao’s tomato sauce - it is actually amazing.

Mix your sauce together and let it cook while you drop the pastav
