What you’ll need
chopped walnuts (optional)
2 cups (240g)
1 cup (198g)
Add flour, sugar, shortening, eggs, baking soda, and bananas to the bowl of your stand mixer.
Mix on low-medium speed until a batter forms.
Scrape down the sides of the bowl.
Mix again on medium to medium-high speed to break up the shortening and fully mash the bananas.
Grease and flour a loaf pan. (Bonus points if you use hot cocoa mix instead of flour.)
Pour the batter into the prepared pan. Add any desired toppings.
Bake at 350F for 1 hour and 10 mins. When a knife/toothpick inserted comes out clean, it’s done.
Let cool completely in the pan on a wire rack.
Once it’s cool run a knife around the outside and turn the loaf out onto the cooling rack.
